Description
The Slo Cook Hold & Smoker Oven works beautifully with meats, poultry, fish or cheeses. It’s fabricated of 20 gauge stainless steel, and has a double deck design in which each compartment has a capacity of 100 lbs and holds 7 full size pans. Both compartments also have two non-magnetic, removable stainless steel side racks with 11 rack positions. Two stainless steel wire shelves and one stainless steel rib rack come standard with each compartment as well. They both have a drip pan with a drain and a wood chip container as well. Their doors have windows. The smoker rests on 5 inch casters, two of them rigid and two of them swivel-style with brakes.
The basic functions of this smoker include cooking, smoking and holding meats, poultry and fish, as well as cold smoking fish and cheese. There’s a probe available with this unit, and that’s the best way to cook expensive cuts of meat, because it ensures that they reach the proper internal temperature without being over-cooked to their ruin. There’s a probe control key, and it can be set for temperatures ranging from 50 to 195F. The 60 minute timer offers a choice mild, medium or heavy smoke flavor. Up and down arrows allow you to control cook and hold times, and there are indicator lights for cook, hold and smoke functions. The control pad features a start key and a lock out option.
